Parsnips are another fantastic winter storage root crop which lends itself well to soups and stews. We like to roast them under a chicken with other root crops but the best preparation of parsnips I've ever had was when they were puréed after being roasted. They'll get sweeter after freezing weather but we might sell all them before that happens.
