Our fresh garlic is another short season item that is offered only for a few weeks. After harvesting the scapes, we let the bulbs bulk up a bit before harvisting for use as fresh before we harvest the crop for curing in mid-July. Fresh garlic is used just as you would cured garlic but we find the flavor to be slighly sweeter and less pungent than cured garlic. Cut off the stem at the top of the bulb and store what you don't use in the fridge.
